Building a smaller seasonal menu

A very long menu can look generous while making it harder to cook each dish well. Moss & Ember takes the opposite approach: fewer dishes, more attention and enough change to make a return visit interesting.

Begin with ingredients, not trends

Maya starts with produce that is naturally good at that point in the year. Mushrooms, greens, squash, apples and citrus can lead the direction of several dishes rather than appearing as decoration on one plate.

Let ingredients work across the menu

A herb dressing might appear with a grain bowl and a focaccia. Roasted vegetables may become a brunch side, lunch filling and soup base. Thoughtful cross-use helps ingredients stay fresh and reduces waste without making every dish taste the same.

Keep the signatures

Seasonality does not mean removing everything familiar. The Moss Breakfast, Turkish Eggs and cinnamon buns remain anchors, while their supporting ingredients and specials move through the year.

Make dietary choices part of the menu

Vegetarian and vegan dishes are designed from the beginning, rather than created by subtracting half a plate. Allergens are clearly communicated, and the team can explain practical alternatives.
