How we choose a house coffee

A house coffee has to do several jobs well. It needs enough sweetness and structure to taste satisfying as espresso, but it also has to remain clear through milk. It should be dependable for regular customers while still feeling connected to the current harvest season.

Start with the way people order

Most customers do not begin with processing methods or altitude. They begin with “flat white”, “espresso” or “something not too acidic”. That is useful information. Daniel tastes potential coffees in the drinks people actually order, not only in a tasting bowl.

Look for balance, then character

We want chocolate, caramel or nut-like comfort, supported by enough fruit and brightness to keep the cup lively. The goal is not a coffee that shouts the loudest. It is one you are pleased to drink again tomorrow.

Change with the season

Coffee is an agricultural product. Different origins arrive at their best at different points in the year, so the house coffee may change while the broad flavour style stays familiar. The team recalibrates grinders and recipes carefully so the transition feels smooth.

Keep the conversation easy

We will always tell you what is on the grinder and where it came from. We will also happily make your usual order without turning it into a lesson. Good coffee should be interesting, not intimidating.
